Breakfast Kitchen Demi Chef de Partie

Reports to: Breakfast Chef / Chef de Partie

Function Purpose

The Breakfast Demi Chef de Partie is responsible for preparing dishes by portioning, plating, garnishing and consistency of presentation. As well as this, ensuring that all preparations have been made prior to the service. A Breakfast Demi Chef de Partie has knowledge of different cutting techniques, basic sauces and cooking techniques. Within this position, you are expected to take on all tasks within your section and other sections in order to improve and grow.. Furthermore, you take care of and maintain a good standard of work and only stop when all tasks have been completed. The Breakfast Demi Chef de Partie also sets an example for and supports the interns and apprentices who are present in the kitchen.

Job requirements

It is essential for this position to meet the following requirements:
Flexible: Willing to work different shifts - mornings and evenings, weekdays, weekends and holidays / willingness to work in different F&B outlets / Willingness to work and assist in other departments within the organization if required..

On-call: If necessary, you will be present at the hotel within 2 hours if the business requests it.
Physically strong: Capable of working an entire shift on the floor
Communicative: Proficient enough to be able to communicate in English.

Expected results

1. Preparations
Preparations such as washing, cutting, (pre)cooking, etc.
Maintaining mise en place
Assessing the quality such as freshness, shelf life, consistency, etc. of products/ingredients/raw materials to be used
2. Mise en place
Preparation of dishes and components according to recipes or specific instructions
Performing quality checks (cooking time, taste, colour, etc.)
Preparing the dishes by portioning, plating, carrying out à la minute cooking work, garnishing and checking for presentation
3. Contribution to quality/optimisation
Ensuring the proper storage and processing of the various products
Making proposals for adjustment of menus, recipes, garnishes, etc.
Supporting the trainees/apprentices
Checking and accounting for quantities of ingredients
4. Completion of work
Preparing the orders
Tidying up/cleaning the work environment, kitchen appliances and other work materials
Works clearly, even when delegating work

Result criteria

Correct, timely execution of the desired work (e.g. setting priorities/ planning/maintaining consistency)
Compliant with regulations (e.g. instruction, working methods, HACCP, presentation, recipes, safety, FIFO, health and safety)
Quality control (to the satisfaction of Chef and guests)
Clean and tidy workplace/ working environment
Efficiency (quantities used, spillage)
Proper storage of items
Sufficient stock
